mama's korean hot-spicy sesame chicken
For those who wanted my mama's chicken recipe.
[A] Frying the chicken1. Cut the chicken into favorable size.2. Drain the chicken of water.3. Put salt, black pepper, and garlic. Mix them well with the chicken.4. Leave it for 5 min.5. Heat the cooking oil until it's about 200 degrees celcius. Try to keep the temperature constant.6. Fry the chicken. Make sure that the chicken has this yellowish brown color after the fry.
[B] Making the chilly spicy sauceThis is where you have a problem.. you need this thing called "go-chu-jang", in English, korean chilly paste. I'm not so sure where you can get one. NCCC Mall used to have a stock some months ago, but i don't think they still have the stock... Neverthless, here are the steps to make the sauce.1. Put the korean chilly paste, sugar or honey, and barbeque sauce into a bowl. Here, the sugar/honey and the barbeque sauce should be in a proportion of 1 to 1.2. Mix it thoroughly.3. Heat the frying pan for a minute.4. Put about 3 spoonfuls of cooking oil in the pan.5. Put the mixture in the pan, and stir it well.6. Put some water. then mix them well.7. Boil it down untill the mixture becomes quite sticky.
[C] 1. Put the fried chicken in step[A] and the sauce in step[B] together.2. Mix them well enough for the chicken to be coated well by the sauce.3. Sprinkle some sesame seed and some ground peanut.
